This super easy roast vegetable focaccia is like taking a trip back to the Mediterranean. Soft baked focaccia dough with a beautiful open crumb structure is the perfect addition to any breakfast, lunch or dinner ideas. Topped with a mixture of roasted vegetables, sweet scented roasted garlic and onions, the unexpected green grapes add colour sweetness and bursts of juiciness after being baked along side the salty kalamata olives. Roast vegetable focaccia that would make your Nonna proud
Ingredients
Dough:
- 400g Water
- 8g Dried Yeast
- 500g Bakers Flour
- 50g Wholemeal Flour
- 30g Polenta
- 12g Salt
- 75g Water (2)
- 50g Extra Virgin Olive Oil
Toppings:
- 150g Extra Virgin Olive Oil
- 60g Caramelised Onion
- 10 Garlic Cloves, Roasted
- 12–15 Green Grapes, Seedless
- 12–15 Olives Kalamata, Pitted
- 12 Cherry Tomatoes
- 8–10 Baby Peppers
- 10 Thyme Sprigs
- Pinch Sea Salt flakes Smoked
- 60g Water
Instructions
1. Add water with the dried yeast first into the stand mixer with dough hook attachment (If you don’t have a mixer, you can knead by hand)
2. Add in dry ingredients, except for the salt
3. Mix to develop dough and gluten
4. Add salt and continue to mix
5. Lastly, add oil and water (2) in 3 parts
6. Place the dough into an oiled tray and put a fold in the dough
7. Cover in cling film and repeat the fold every 30 minutes two more times
8. While the dough is proving, chop the vegetables and slow roast the peppers and tomatoes
9. Once the dough has proved, push the dough out with your finger tips
10. Add olive oil to the dough and all the roast vegetables, grapes, olives and thyme
11. Finish with a drizzle of olive oil, water and smoked salt
12. Bake at 200 degrees celsius for 5 minutes then 170 degrees celsius until lightly golden. You only want to it to be lightly golden to keep the vegetables as coloured as possible.
