Chocolate brownies are a crowd pleaser, but if you REALLY want to impress and excite you and your mates taste buds, then try this heavenly brownie recipe. This is a unique flavour combination, but when balanced well, works an absolute treat! The good thing about brownies is that they are versatile, you can swap out flavours to whatever tickles your fancy. For example, if you don’t like pistachio, you can swap it for macadamias etc… I will take you step by step through this brownie recipe to show you how I make it.
Firstly, weigh out all the ingredients separately and keep your working space as clean as possible so you don’t overwhelm yourself. ‘Clean as you go’ is one of the best tips I could give.
Add the sugar, lime zest and REALLY finely chopped lime leaf into a mixing bowl.

Lightly beat the eggs in a separate bowl and add the sugar, lime zest and lime leaf to the eggs and whisk well making sure there are no lumps of sugar.

In a heat proof bowl, melt the butter and white chocolate in 20 second intervals so that you don’t burn the chocolate. Keep mixing between intervals. Add the melted chocolate mix to the egg and sugar mix and whisk until well combined.

Add the green tea, baking powder, flour and salt and whisk until there’s no lumps. Fold through the pistachios and white chocolate drops gently until just combined.

Pour the mix into an 8inch lined pan and bake at 165 degrees celsius for 45 minutes. Check with a skewer at 30 minutes to see if it is done as all ovens are different. Once the brownie has come out of the oven cool the brownie down completely before completing the next step.

Melt some milk chocolate and pipe drizzles of it all over the top of the cooled brownie.

Sprinkle some crushed pistachios on top of the brownie.

Cut the brownie up into generous portions and serve. Also tastes incredible with a scoop of ice cream.

Ingredients
- 270g Eggs
- 270g Caster Sugar
- 270g White Chocolate
- 1 Lime Zest + Juice
- 6 Lime Leaves, Finely Chopped
- 160g Butter
- 20g Matcha Green Tea
- 100g Plain Flour
- 2g Baking Powder
- 6g Salt
- 100g Pistachios
- 100g Milk Chocolate Drops
- 70g White Chocolate Drops

- Chopped Pistachios
- Milk Chocolate (melted)
Instructions
1. Add sugar, lime zest and chopped lime leaves into a bowl
2. Lightly whisk eggs in a separate bowl
3. Add sugar mix to the eggs and whisk well to combine
4. Melt butter and white chocolate in the microwave in 20 second intervals and add to sugar and egg mix and whisk well
5. Add lime juice and whisk
6. Add the green tea, flour, baking powder and salt and whisk until combined
7. Add white chocolate, milk chocolate drops and pistachios and gently fold through
8. Pour the mix into a greased and lined 8 inch square baking tin
9. Bake at 165 degrees celsius for 45 mins then leave to cool
10. Drizzle the melted milk chocolate on top and chopped pistachios
11. Serve warm or chilled. Enjoy!
