Cheesy, Herby, Garlic Buns

Cheesy, herby, garlicky buns! What a time to be alive! Surprising and unassuming, these soft buns are so insane, you will never EVER buy store bought garlic bread ever again. Take one bite into those soft buns and surprise your taste buds with garlicky herb goodness and luscious, stringy cheese. Here are a few tips:

  1. Use a 13 x 9 inch tray to make your buns. You can use the tray for my other tray bake recipes
  2. Freeze the buns to use on a special occasion, it will still taste just as soft and amazing
  3. Make enough garlic, herb butter to save in the fridge to use for other things! (E.g. an epic risotto)

Ingredients

Garlic Bun

  • 640g All Purpose Flour
  • 450g Milk
  • 14g Fine Salt
  • 14g Dry Instant Yeast
  • 120g Unsalted Butter
  • 30g Honey
  • 20g Roast Garlic
  • 40g Parmesan Cheese
  • 2g Thyme

Garlic, Herb Butter

  • 250g Butter u/s
  • 2 Bulbs Roasted Garlic
  • 1tsp Mustard
  • 3g Dill, Fresh
  • 6g Parsley, Fresh
  • 4g Thyme, Fresh
  • 1/2 Lemon & Zest
  • 35g Parmesan Cheese
  • 50g Mozarella
  • 15g Flour
  • Pinch of Salt & Pepper

Instructions

Garlic Bun:

  1. Add flour, honey and yeast into a bowl and use your fingers to combine
  2. Add garlic, butter, cheese and herbs
  3. Add 3/4 of the milk and bring dough together with your hands then add remainder of the milk
  4. Knead the dough until smooth then add the salt and give one last knead
  5. Cover bowl with tea towel and leave to prove for an hour and a half and put a fold in every 30 minutes

Garlic, Herb Butter:

  1. Chop herbs finely and add to the soft butter
  2. Add lemon zest and salt and pepper and mix together
  3. Add roasted garlic, cheese, mustard and flour and mix together
  4. Roll garlic butter mix into a log in cling film and refrigerate for 1 hour to chill firm

Assembly:

  1. After dough has proved, divide equally and add a cube of butter and a cube of mozzarella and roll into a ball and place in the tray
  2. Give the dough a final prove for 1-2 hours (until risen enough)
  3. Give the dough an egg wash and bake at 180 degrees celsius for 15-20min until golden
