Croquembouche

The Croquembouche is now available to order in the online store!

We can provide towers of 35, 75 and 100 profiteroles, with vanilla and/or chocolate centres.

The croquembouche MUST be eaten on the same day it is made.

The caramel the profiteroles are coated in is hygroscopic (absorbs water from the air), if you place the croquembouche in the refrigerator after a few hours the caramel will start to dissolve due to the humidity within the fridge.

We make each croquembouche as close to collection time as possible.

We recommend collecting the croquembouche as close to serving as possible and storing it in a very cool & dry room for a maximum of 2-3 hours and then refrigerating the croquembouche.

These are available to collect only at the cafe at 114 Terry St, Rozelle between 10.30am and 4pm.

Orders placed with less than 3 days notice will not be filled. Orders are not accepted on public holidays.
